I created this simple side dish purely by accident when I was given some large Vidalia onions.  And it can be  low-cal, too, with only two ingredients! 

Warning: Your house will smell wonderful, so open the windows and tease the neighbors!

Cheesy Baked Onions

You'll need:

  • 2 large Vidalia onions (Vidalia onions are sweet, but white onions may be substituted), sliced and separated into 1/2 inch pieces
  • 2 tablespoons water
  • 1 cup grated Parmesan cheese (lite works well)
  • Non-stick cooking spray
  • Aluminum foil (optional)
  • Pepper (optional)

Line a 9" x 12" baking pan with foil for easy clean up. 

Spray foil with non-stick spray. 

Spread the individual onion slices evenly over the pan. 

Sprinkle with two tablespoons water to steam the onions.

Spray the onions with non-stick spray.  Evenly sprinkle with Parmesan cheese.

Cover the pan with more foil. 

Bake at 325° F for 45 minutes or until tender and edges begin to brown.

Uncover the onions and bake for another five minutes or so to further brown, checking to make sure the onions and cheese don't get too dark.  

Serves 4.
