You'll need:
Combine 1/2 cup of the pineapple juice with water, tarragon, bouillon cube and a sprinkling of salt. Melt the butter or margarine over high heat, cooking the chicken strips for 3 to 4 minutes until cooked clear through. Stir often so they won’t burn. Add onion, green pepper and celery and cook three minutes longer. Keep stirring. Add the pineapple mixture. Bring to a boil and turn the heat down to medium. Cover and cook for about 4 minutes. Meanwhile, combine the cornstarch and 1/4 cup cold water.Mix everything together with the chicken. Stir quickly while the sauce is thickening. Once thick, add pimiento, if desired and serve over hot rice. |
