You'll need:
Combine water and sugar in saucepan and cook over low heat, stirring to dissolve the sugar. Raise heat to medium, stirring on and off, being careful not to burn the bottom of the pan. Cook until firm balls form that keep their shape when dipped in cold water and then removed. Stir in the mashed sweet potatoes. The mixture will be thick. Let it cool. Roll the mixture into bite sized balls and then roll them in powdered sugar. Place the balls on waxed paper to dry overnight.
Makes approximately 3 dozen balls, depending upon their size. |
