Cookbooks Every summer, our dear Nana, Margaret Bayer, made Wilted Lettuce Salad with fresh lettuce from the garden. Although we are very careful about eating too much bacon these days, this dish makes a delicious treat for special occasions. Taste the dressing before pouring it over the lettuce. You may want to make it a bit sweeter by adding more sugar to get the perfect sweet/sour taste for your palate. Enjoy, |

You'll need:
With scissors, cut the raw bacon into small pieces. Brown in a tall sided frying pan or soup kettle, stirring with a long handled spoon stir to brown evenly. Remove the bacon with a slotted spoon to a paper towel to drain, cool and crisp up. Save at least half the grease to give a bacon flavor to the dressing. To the same pan, add the vinegar, water and sugar to the bacon grease. Heat to boiling. Pour this dressing over the lettuce. Toss with bacon, chopped egg and cheddar cheese. Serves four.
