Salad Cookbooks Salad Recipes Recipes I made this salad for my husband's birthday dinner. The combination of slightly salty cashews (no, you don't need unsalted nuts!) with crisp apples was simply yummy. And the apple leftovers did not turn brown when we finished off the salad the next day! Apple Cashew Salad is good year round and perfect for a luncheon. Wait to add the cashews until the last minute, though, to keep them crispy. Enjoy, "I took your apple/cashew
salad to a bar-b-que Sunday evening, and handed out the recipe to AT LEAST a
dozen women. LOL !!! I actually got a hug for MAKING it !!! LOL !!! They all
competed for who was going to get to take home the left overs, but as it
turned out, the only thing left over was a dirty bowl !!! And when someone
complimented me on it and I thanked them but said it's not my recipe, my
pastor's wife overheard me and said, 'SHHHHHH ! No one needs to know that
!!!!" We all got a good laugh out of that.'"

You'll need:
Combine the apples and celery. In a separate small bowl, mix the powdered sugar with the mayonnaise and pour this dressing over the apples, stirring to coat. Refrigerate. Just before serving, toss in the cashews and mix gently, but well. Serves four. |
