There is an elegant restaurant I know that serves Loaded Potato Soup.  Yes, it's delicious, but it's sooooooooooo fattening because they use heavy cream and real butter and real bacon.  I will do everyone a favor and extend his or her life by not repeating that deadly delicious recipe.  Mine is really good, but lower in calories.

Potato Soup

You'll need: 

  • Instant potato flakes
  • Non-fat milk
  • Water
  • White onion, chopped
  • Low-fat sharp cheddar cheese, grated
  • Bacon bits
  • Salt and pepper to taste
  • Green onions for garnish

In a 3 quart microwaveable bowl, mix instant potato flakes, two parts milk, and one part water to make a medium thick soup-like consistency. 

Toss in some chopped white onions and a little salt and pepper. 

Heat through, stirring several times until you have the desired thickness. (You may have to add more milk or water if it thickens too much.  If it's too watery, add a few more flakes.  Play with it.) 

Taste to see if more salt is needed.

Garnish with bacon bits, green onions and cheese. 

Serve with a salad, and you've got dinner prepared in a snap.
