This recipe was suggested by my friend, Bob Shannon.  It’s for those who are watching their intake of carbohydrates, and who isn’t?  It’s flavorful, different and has only three ingredients counting the pork chops!  Oh, it’s also wonderful if you substitute chicken breasts. Thank you, Bob.

Bob Shannon's Pork Chops or Chicken Oriental

 

You'll need:

  • 6 thin pork chops, center cut with fat removed or three split (six pieces total) chicken breasts (skinned and boned)
  • 1 cup lite soy sauce (regular works too)
  • 1 cup white vinegar
  • Minced onions to taste (optional)
  • 3 to 4 bay leaves (optional)

Rinse the meat.. 

Pour soy sauce, vinegar and onions into a deep frying pan.  Submerge the meat and bring the ingredients to a boil.  Reduce heat to simmer for 1/2 hour to 1 hour until the meat is cooked through and is no longer pink. 

Remove and discard the bay leaves. 

Serve extra sauce over rice if desired.
