Reviews Soup & Stew Cookbooks I remember our parents talking about Ox Tail Soup when I was a child in Erie, Pennsylvania. Ox tails were inexpensive and therefore popular during the Depression. Today, the tails are harder to find and considered, in some circles, to be delicacies. Beef tails are often substituted. My friend, Vicki Akins, gave me an old recipe she found. Since I don't know what my mother's Ox Tail soup tasted like because I never would try it, I have combined several recipes. Ox tail gives the soup a richer flavor than beef does. Enjoy, |

You'll need:
In a frying pan, sear the tails and / or beef on all sides. Add the onions and cook until they are clear. Transfer the meat to the slow cooker. Add the rest of the ingredients. The suggested cooking time is six hours on high. Turn to low for two hours. Older slow cookers may not get as hot as newer pots, so adjust the time. Just make sure the meat and vegetables are tender. Barley (doubles when cooked), beans, or egg noodles may be added. Great with garlic toast. |
