It was such a novelty to me, a native of Pennsylvania, that I would harvest the fruit just before the first frost and send them north and to the Midwest. You'll need:
Soak the peel in several inches of salt water in a saucepan. Use enough water to cover the peel. Drain and add fresh water. Gently boil the peel for two hours to soften it. Drain and add more fresh water. Boil for another two hours. Drain, add water and boil a third time. Drain and cool the peel on a rack. Cut it into strips. Mix 1/2 cup cold water with 11/2 cups of sugar. Boil the water and then add the peel. Keep a soft boiling going and the liquid will eventually evaporate and be absorbed by the peel. When the liquid is gone, roll and cover the peel in sugar while it's still warm. Cool on a rack until dry. |
