You'll need:
Mix the flour, yeast, sugar and salt in a big bowl. Melt the butter and warm the potato water. Cool the liquids slightly so they are warm to the touch - NOT hot. Slowly add them to the flour mixture and mix well. Add beaten egg, potatoes and the remainder of the flour to make a soft dough. Knead for 10 minutes on a lightly floured surface. Let the dough rest and breath for another 10 minutes, covering it loosely with a tea towel.
Add the raisins by kneading them into the dough. Divide the dough into two portions, rolling each portion into an 8 inch length. Place both of your long rolls, side by side into an 8 1/2" x 4 1/4" greased (or sprayed with non-stick cooking spray) bread pan. Again, cover with a tea towel and let the bread rise for a good hour in a warm place until it's doubled in size. Bake in a preheated oven at 350° F for about 30-35 minutes until the bread sounds hollow when tapped. Cool on wire rack. This recipe may be easily doubled.
