You'll need:
For easy clean up, line the 9"x13" pan with foil. Spray a wire rack with non-stick spray. Trim any excess fat from the chicken. Dip one side of each breast in the flour. Mix cheese, mayonnaise, garlic and spinach. Divide spinach mixture evenly between the breasts. Place the mixture in the center of each breast. Fold up the four sides of each breast and secure with toothpicks. Place the breasts on the rack and place one strip of bacon cut into two pieces atop each chicken bundle. Bake at 325° F for 60 to 70 minutes until the chicken is no longer pink and the bacon is crisp. Serves 6. |
