Recipes Main Dish Recipes Our dear friend, Bonnie Shivley, sent us this recipe, saying, "I came up with a fun recipe over the week end, using whatever I had on hand. George and Micki loved it !! (And they don't often get excited about my cooking ! LOL!) Thanks, Bonnie. We love it, too. Enjoy, |

You'll need:
Brown ground beef and onion, and drain. Mix in burrito seasoning. Stir until completely coated. Transfer meat mixture to casserole or baking dish. Spread these ingredients evenly in separate layers over the top of the meat:; tomatoes, chopped jalapeños, corn. Sprinkle sugar evenly over the top layer. Drizzle lime juice evenly over all. Top with cornbread batter, spreading evenly. Top with shredded cheese, if desired. Bake in 400°F oven 20 to 30 minutes, or until cornbread is golden brown and begins to pull away from sides of the pan. Allow the casserole to rest a few minute before cutting into it, so you don't have a juicy mess. It sets up better in just a couple of minutes of cool down time.
