I love egg salad. I especially love it when it's still slightly warm from the freshly boiled eggs. On sandwiches, crackers, open faced with a tomato or on a bed of lettuce, it's wonderful for lunch, brunch, as an appetizer or a light meal with a soup. It's been around for quite a while and is served in my historic romance novel, The Goodbye Lie. Enjoy, |
