Almond Bark - artificial white chocolate

Baking chocolate - bitter or unsweetened chocolate

Bittersweet chocolate - see semisweet

Cacao - beans are the source of chocolate - the word comes from the Aztec (Nahuatl) "cacahuatl" or gift of the gods

Carob - brown powder from an evergreen plant used as a substitute for cocoa

Cocoa - brown powder from the cacao plant

Cocoa Butter - fat from cacao beans

Chocolate Liquor - shelled, cleaned and roasted chocolate from crushed cacao beans

Coverture - professional grade chocolate, at least 32% cocoa butter; "coverture" refers to the use of this type of chocolate as the outer layer for expensive candy

Ganache - a cream and chocolate filling often used in cakes

Milk Chocolate - 10% or more chocolate liquor + 12% milk solids + sugar + cocoa butter + vanilla

Semisweet Chocolate - same as milk chocolate with higher per cent of chocolate liquor

Sweet chocolate - made of at least 15% chocolate liquor plus cocoa butter and sweetener

White Chocolate - same ingredients as milk chocolate without the chocolate liquor - despite the minimum 32% cocoa butter, this isn't real chocolate
