Our grandmother, Grammy, often made a huge batch of her Chicken Pot Pie.  Not to be confused with a main dish pie, this is more of a soup / stew with chicken and much easier to make than they sound hand-cut square noodles.  My friend, Lilly Minotto, gave me her mother's version of the recipe, which is very similar to mine. 

The fictional character of Grammy serves this dish to the Dunnigan family in Velvet Undertow, the second novel in my Goodbye Lie Fernandina Fancy series.

Chicken Pot Pie Stew

You'll need these ingredients for the chicken:

  • 1 roasting chicken or 2-3* skinless boneless breasts
  • 6 potatoes, peeled and cubed
  • Noodles (see recipe below) or use prepared noodles
  • Water (enough to cover chicken to make broth)
  • 1 diced onion
  • 1 cup finely chopped carrot and celery, optional
  • Salt and pepper to taste

 

When using a whole chicken,

Remove the giblets from the chicken and wash the bird.  

Place the chicken in a large pot along with the onions, salt and pepper, and cover with water. 

Cover and bring the chicken mixture to a boil.  Let this  simmer up to two hours or until chicken falls from the bone. 

Remove the chicken from the broth with a slotted spoon and any bones from the broth.  Discard the bones. 

When the chicken is cool enough to handle, remove bones and skin and tear chicken into bite-size pieces.

Add the vegetables to the broth and cook 15 minutes or so until almost tender. 

Return the chicken to the broth. 

Place the noodles in the broth and cook about 10 minutes or until done.

 

*When using chicken breasts,  

If using cut up chicken breasts, reduce the chicken cooking time to about an hour or until done.  There is no need to remove chicken from the broth since there is no skin or bones.   

 

Assemble the following for the noodles:

  • 1 1/2 cups flour
  • 2 tablespoons baking powder
  • 3/4 teaspoons salt
  • 1 tablespoon shortening
  • 3/4 cup of milk

Mix all the above ingredients evenly. 

Roll out the dough and cut it into three inch squares. 

Drop them into the broth to cook once the chicken is done.
