Reviews Soup & Stew Cookbooks Sometimes, even in the spring or summer, you want something hot in your tummy. Since I'm a lover of cheese, I make this soup year round. I've combined several recipes and this rich goodness is the result. The alcohol from the beer evaporates when the beer is heated so it's safe for children. Assemble:
In a medium pan with range set on medium heat or in the microwave, melt the butter or margarine, being careful not to scorch it. Whisk in the flour and stir constantly (once every minute if using the microwave) until bubbles form and the mixture begins to thicken. Reduce the heat and add all the remaining ingredients but the cheese. Simmer for 15 minutes. Add the cheese, stirring so the soup won't stick to the bottom of the pan. Once cheese is melted, serve hot. This recipe makes approximately 4 servings.
