Reviews Soup & Stew Cookbooks Aunt JR told me she asked for this recipe after having it at a church luncheon. It was originally prepared for 120 folks, but she whittled it down to serve 4 to 6. Assemble:
Cook the above ingredients until tender in a frying pan sprayed with non-stick cooking spray. Cover to steam the veggies, stirring occasionally. Once tender, remove to a separate bowl. In the same frying pan add:
Once this sauce is smooth, add:
Stir until smooth. Return cooked veggies to chowder. Simmer everything slowly on the stove for 1/2 hour or until the cheese is melted. Be careful not to scorch the cheese. If your chowder is too thick, add boiling water to thin it.
