You'll need:
Rinse the chicken breasts under cool water. Cover with plastic wrap to avoid splatters and then flatten each breast with a kitchen hammer or one from the garage that has been sterilized in boiling water. Sprinkle each breast with chopped onions and place 4 to 6 whole olives in the center of each breast. Fold over and secure with toothpicks. Sprinkle with garlic powder. Place in 8” x 11” baking dish atop melted margarine or cooking spray. Bake at 400° F for 25 to 30 minutes. Meanwhile, mix cornstarch, lemon juice and apricots in a pan on top of the stove and heat to boiling, stirring often. Remove chicken from oven and turn over. Add brandy to apricot sauce and pour over chicken breasts. Bake another 20 minutes. Serve with tossed salad and rice.
