I've owned a number of slow cookers in my time.  Like the mixers I burn out, these appliances are always replaced promptly when they cease to work because our family dinners wouldn't happen without them.

When I got my hands on a copy of Wendy Louise's The Complete Crockery Cookbook, my mouth started to water and I couldn't decide which recipe to prepare first.  Fortunately, my slow cooker was in working order and dinner magic happened in our kitchen.

We've included one of Louise's recipes on this page to give you an idea of the great meals in store for you when you add The Complete Crockery Cookbook to  your cookbook library.

Easy Homemade Pot Roast of Beef Recipe

6-8 servings

  • 1 (3-4 pound) brisket, rump roast, or pot roast
  • 2-3 potatoes, peeled and sliced
  • 2-3 carrots, peeled and sliced
  • 1-2 onions, peeled and sliced
  • 1/2 cup water or beef consommé
  • Salt and pepper to taste

Put vegetables in slow cooker.

Salt and pepper the meat and place on top of the vegetables.

Add the water or consommé.

Cover with lid and cook on low setting for 10-12 hours, or high setting 4-5 hours.

Remove roast to a deep dish platter and slice before serving.  Surround with vegetables and cooking juices.

 

Variations:

  • German-style: Add 3-4 medium dill pickles and 1

teaspoon dill weed to the above recipe.

  • Italian-style: Add 1 (8 ounce) can tomato sauce, 1

teaspoon crushed oregano and 1 teaspoon basil to the above

recipe.

  • French-style: Omit carrots and potatoes.  Add 1 cup fresh

sliced mushrooms, or 1 (8 ounce) can of sliced mushrooms. 

Use 1 pound small peeled onions, or pearl onions.  Add 1

cup dry red wine.

  • Basic Pot Roast-Plain and Simple: Season roast with

salt and pepper and any other favorite seasonings.  Place in

slow cooker.  Do not add any vegetables or liquid in this

version.  Cover with lid and cook on low setting 10-12 hours,

or until meat is extremely tender.
